Quinoa & chickpea salad revolutionizes healthy eating

Their superior texture, achieved through lower temperature and shorter Cooking times, has transformed my salads. Today's dish is a recent favorite, showcasing the versatility of quinoa, chickpeas, and a medley of complementary flavors and textures.

Quinoa and chickpea salad with red cabbage, pomegranate & pistachios
This makes a light yet satisfying dinner or substantial lunch. Key to the dish's visual appeal and flavor is the timing of adding the chickpeas and feta cheese. Toss them in at the end to prevent pink staining from the cabbage and pomegranate molasses.
- 175g quinoa mix (black, red, white)
- 250g red cabbage, cored and shredded
- 570g jarred chickpeas, drained
- 40g flat-leaf parsley, chopped
- 40g pistachios, shelled and chopped
- 200g vegetarian feta, broken into pieces
- 6 tbsp olive oil
- 2 tbsp fresh lemon juice
- 3.5 tbsp pomegranate molasses
- 0.75 tsp pul biber (Aleppo pepper)
Instructions:
- Bring quinoa and 300ml water to a boil. Reduce heat, cover, and simmer 12 minutes. Let stand, still covered.
- Pummel shredded cabbage with a quarter-teaspoon of salt until wilted.
- In a large bowl, combine cooked quinoa, cabbage, chickpeas, parsley, and pistachios. Top with feta.
- In a small bowl, whisk together olive oil, lemon juice, pomegranate molasses, pul biber, and salt. Pour over the salad and toss to combine.
